On the eve of the summer solstice, Tile Table will be hosting a special one-night-only dinner to conjointly investigate the phenomenon of cultural fermentation in collaboration with:

Brooklyn Oenology Winery
High Steaks Media
and
Club Sourdough
the pop-up gallery and location of this affair.

To celebrate the arrival of the summer season and the collective creative force of this event, we poetically decided to design a menu that features Sambal, an important ingredient in the special melting-pot food culture that can be found in the country of Malaysia.

Sambal is a fermented chili paste that incorporates dried fish local to the region to add a unique layer of brininess and sweetness to its flavor. It is used on its own as a dipping sauce for raw vegetables and bread, and also as a base in rich sauces and stews.

For an added bonus, fermented chilies, such as Sambal, are high in capsaicin and probiotic enzymes, which are natural and beneficial detox agents that will help regenerate your body just in time for the new season.

We look forward to sharing this unique spicy solstice meal with you.
